The Saison Day menu at Table will focus on Chef Pierre Gignac’s Franco-Canadian specialities like Cassoulet with Flageolet Beans, Pork Rillettes and Maple Taffy made in-house on snow. Chef Gignac will prepare each course with Allagash Brewing Company’s signature saison beers including Saison, Century Ale, Interlude, and Astrid, and Allagash staff will be on hand to share insight about each pairing and beer.
